After drinking water from a bottle of homemade sour bamboo shoots, a 44-year-old female patient was admitted to the hospital in a coma and convulsions˳
On June 16, the Poison Control Center, Bach Mai Hospital informed that it had just received a 44-year-old female patient (residing in Thai Nguyen) hospitalized in a coma, mechanical ventilation, heart muscle damage˳
According to the family’s account, the patient and her husband drank sour bamboo shoots from a jar of homemade sour bamboo shoots (the jar contained about 1kg of bamboo shoots, fresh soaked for a year, used to eat gradually)˳
The patient drank about 200ml, and the husband drank about 30ml (no symptoms)˳ After taking about 5 minutes, the patient showed symptoms of headache, vomiting, generalized convulsions, coma˳
After being treated at a local hospital, the blood test results showed severe metabolic acidosis and elevated blood lactate˳ The patient was transferred to the Poison Control Center, Bach Mai Hospital due to suspicion of cyanide poisoning, with a severe prognosis, possibly complicated developments˳
Doctor Nguyen Trung Nguyen, director of the hospital’s Poison Control Center, said that according to test results, all samples contained cyanide˳ Includes both bamboo shoots and samples from the patient’s body˳
The patient continued to receive intensive resuscitation treatment, his condition gradually improved, his consciousness returned to normal, and the trachea was extubated˳
According to Doctor Nguyen, cyanide is extremely toxic, the lowest dose that can cause death in humans is 0˳56mg/kg body weight˳ Maybe the husband drank less so he didn’t get poisoned˳
“In some plants, bamboo shoots and cassava typically contain cyanide precursors (called cyanide-producing glycosides), which, when ingested, convert to cyanide˳
In fact, the amount of toxins in bamboo shoots quickly decreases through processing such as boiling, soaking, and brewing˳ However, when soaking bamboo shoots, a certain amount of cyanide is also generated, the amount of toxins in the bamboo shoots can be reduced but the toxins in the water can increase˳ So if you drink too much bamboo shoot juice, you can be poisoned˳
Cyanide poisoning from eating bamboo shoots in humans is very rare and only happens when you eat so much that you eat bamboo shoots or eat a lot like “eating instead of rice”˳ Especially with fresh bamboo shoots due to the high amount of toxins˳ Under normal eating conditions, people can drink a few spoons of bamboo shoot juice as a condiment, which will not affect their health, “said Dr˳ Nguyen˳
Prevention of cyanide poisoning caused by bamboo shoots and cassava
To prevent cyanide poisoning from eating bamboo shoots and cassava, doctors recommend that people need to fully process bamboo shoots and cassava before eating˳
With bamboo shoots should boil thoroughly (if possible, boil 1-2 hours)˳ Fresh bamboo shoots, before being soaked in a jar, are cut into small and thin pieces, then soaked in water for 24 hours to remove toxins˳
Note that in the process of boiling or soaking bamboo shoots outside, it is necessary to change the water many times to effectively remove the toxins (because the old water has toxins from the bamboo shoots diffused out)˳
People should also avoid situations of eating too many bamboo shoots˳ Water soaked bamboo shoots can be seasoned, but should not be drunk too much˳
With cassava need to peel off the entire peel, then wash the plastic and soak it in a lot of water or change the water many times and also do not eat too much˳
